Apple Streusel Muffins
   
  Ingredients:

2 cups (300 g) Mina's Purely Divine All Purpose Baking Mix
*
1 cup (200g) sugar
*
1 ¼ tsp (2.5 g) cinnamon
*
1 tsp (4 g) baking powder
*
½ tsp (3 g) baking soda
*
½ tsp (3 g) salt
*
2 large eggs (100 g)
*
8 oz (226 g) sour cream or soy sour cream
*
¼ cup (56 g) butter or margarine, melted
*
1 cup (132 g) apples, finely chopped
   
  Preparation:
   
  Mix baking mix, sugar, cinnamon, baking powder, baking soda and salt. Set aside.
   
  Beat eggs, sour cream and butter.
   
  Add to dry ingredients until just moistened. Don't overbeat.
   
  Fold in apples.
   
  Fill muffin cups ⅔ full.
   
  Toppings:

3 Tbsp Mina's Purely Divine All Purpose Baking Mix
*
¼ cup sugar
*
¼ tsp cinnamon
*
2 Tbsp butter or margarine, cut in small pieces
   
  Combine sugar, baking mix and cinnamon.
  Rub in butter until crumbly.
  Sprinkle portion on each muffin top.
   
  Bake at 400ŗF for 20 minutes.
   
  Yields: 18 Muffins
