Apple Streusel Muffins

2 cups (300 g) Mina's Purely Divine All Purpose Baking Mix

1 cup (200g) sugar
|
* |
1 ¼ tsp (2.5 g) cinnamon |
* |
1 tsp (4 g) baking powder |
* |
½ tsp (3 g) baking soda |
* |
½ tsp (3 g) salt |
* |
2 large eggs (100 g)

* |
8 oz (226 g) sour cream or soy sour cream
|
* |
¼ cup (56 g) butter or margarine, melted |
* |
1 cup (132 g) apples, finely chopped
|

Preparation: |

|
|
Mix baking mix, sugar, cinnamon, baking powder, baking soda and salt. Set aside. |
|
|
|
Beat eggs, sour cream and butter. |
|
|
|
Add to dry ingredients until just moistened. Don't overbeat. |
|
|
|
Fold in apples. |
|
|
|
Fill muffin cups ⅔ full. |
|
|

Toppings: |
|
|

3 Tbsp Mina's Purely Divine All Purpose Baking Mix |

¼ cup sugar |
* |
¼ tsp cinnamon |
* |
2 Tbsp butter or margarine, cut in small pieces |

|
|
Combine sugar, baking mix and cinnamon. |
|
Rub in butter until crumbly. |
|
Sprinkle portion on each muffin top. |
|
|
|
Bake at 400ºF for 20 minutes. |
|
|
|
