Chocolate Chip Cookies & Bars

1½ cups (225 g) Mina's Purely Divine All Purpose Baking Mix |

1 tsp (6 g) baking soda |
* |
¼ tsp (1.5 g) salt |
* |
¼ cup (56.5 g) butter or margarine (softened, not melted) |
* |
½ cup (112 g) brown sugar |
* |
½ (112 g) cup sugar |
* |
1 large egg (50 g) |
* |
½ tsp (5 g) vanilla extract |
* |
1 cup (6 oz /224 g) chocolate chips |

Vegan Version: |

Substitute 3 Tbsp coconut or almond milk in place of eggs, bake as directed below. |

Preparation: |

|
Preheat oven to 325ºF. |
|
Mix Mina's Purely Divine All Purpose Baking Mix with baking soda and salt. Set aside these dry ingredients. |
|
Cream butter or margarine with the brown sugar, sugar and vanilla. |
|
Add egg and blend well. |
|
Stir in the set aside dry ingredients. |
|
Mix in the chocolate chips. |
|
|
|
For cookies line cookie sheet with parchment paper, lightly greased. |
|
Drop by teaspoonfuls on cookie sheet 2 inches apart. Cookies will spread. |
|
Bake 9 to 11 minutes. |
|
Yields: 3 dozen 2½" cookies. |
|
|
|
For bars press dough evenly in an oiled, 9 x 13 pan. |
|
Bake 20 minutes. |
|
Let cool 10 minutes. Cut into bars. |
|
Cool completely before removing from pan. |
|
Yields 24 bars. |
