Crepes

1½ (225 g) Cups Mina's Purely Divine All Purpose Baking Mix |

1 Tbsp (12.6 g) sugar |
*

½ tsp (2 g) baking powder |
*
|
½ tsp (3 g) salt |
*
|
2 cups (480 g) milk, almond, coconut or soy milk |
*
|
2 large eggs (100 g) |
*
|
2 Tbsp (29 g) melted butter or margarine |
*
|
1 tsp (5 g) vanilla extract |
|
|
|
Preparation: |
|
|
|
Mix together baking mix, sugar, baking powder and salt. |
|
|
|
Add eggs, milk, butter and vanilla. Whisk until smooth |
|
|
|
Spoon ¼ cupfuls into buttered crêpe pan. |
|
|
|
Swirl batter in pan to cover. |
|
|
|
Cook until top is dried. |
|
|
|
Flip crêpe and cook 30 seconds more on other side. |
|
|
|
|
|
|
|
Yields: Approximately 20 x 6" Crêpes |
