Sweet Potato Cake

   
 
Apple Streusel Muffins
   
  Ingredients:
   
*
1½ (180 g) cups Mina's Purely Divine All Purpose Baking Mix
*
½ (113 g) cup butter 
*
3 large eggs (150 g) 
*
1½ cups (330 g) cooked sweet potato, mashed
*
1 tsp (6 g) baking soda
*
4 Tbsp (60 g) dairy or soy sour cream
*
1 tsp (5 g) vanilla extract
*
1 tsp (4 g) baking Powder
*
1¼ cup sugar
*
¼ tsp (½ g) salt
   
 
Sweet Potato Cake
  Filling:
   
*
1 cup chocolate chips
*
1 cup nuts, chopped
*
 1 Tbsp cinnamon
*
⅓ cup brown sugar
   
  Preparation:
   
  Preheat oven to 325º F.
  Oil a 12 cup Bundt Pan.
  Dissolve baking soda in the sour cream. Set aside
  Combine filling mixture. Set aside.
  Cream butter and sugar. 
  Add eggs, sweet potato, sour cream mixture and vanilla extract. 
  Combine baking mix, baking soda, baking powder and salt in a separate bowl.
  Mix with wet ingredients. 
  Put half the batter in prepared Bundt pan. 
  Sprinkle filling over the top.
  Finish off by spreading rest of the batter over filling.
  Bake 45-60 minutes. Test with pick. 
  Cool 10 minutes and remove from pan.
   
  Cool on rack.
   
   
  Yields: 12-16 servings
