Potato Bread

2⅔ cups (380 g) Mina's Purely Divine Bread Mix
2¼ tsp (7 g) yeast
¾ cup (177.75 g) warm water
½ tsp (3 g) salt
1 tsp (4.2 g) sugar
¾ cup (184 g) potatoes, cooked & mashed
½ cup (120 g) coconut, almond or soy milk
  Spray one 8" x 5" loaf pan.
  Dissolve yeast and sugar in ½ cup of warm water, let rest for 10 minutes until yeast works.
  Add Bread Mix, salt, rest of water, coconut, almond or soy milk and mashed potatoes.
  Mix on medium high for 3 minutes
  Scrape into prepared pan and cover with oiled plastic wrap.
  Set in warm draft free place for 1-1½ hours until dough rises to top of pan(s).
  Preheat oven to 375ºF.
  Remove plastic wrap & gently, but lavishly, brush top with olive oil and place into oven
  Bake 40-45 minutes.
  Yield: 1 large loaf
