Pumpkin Bread

2 cups Mina's Purely Divine All-Purpose Mix |
* |
2 cups sugar |
* |
2 pkgs. 3 oz. each cook and serve vanilla pudding mix |

1 can (15 oz.) solid packed pumpkin |
* |
1¼ cup vegetable oil |
* |
5 eggs |
* |
1 tsp. baking soda |
* |
½ tsp. salt |
* |
½ tsp. cinnamon |
* |
¼ tsp. nutmeg |
* |
¼ tsp. ground ginger |

Preparation: |

Preheat oven to 325°F. |
|
|
|
Mix Mina's All-Purpose Mix, sugar, pudding mix, baking soda, spices and
salt in a bowl and set aside.
|
|
|
|
Beat the eggs and oil in a mixing bowl. Add the pumpkin and beat until smooth. Add the set aside ingredients and mix thoroughly. |
|
|
|
Spray/Oil two 8" x 4" loaf pans or five 5" x 2½" mini loaf pans. |
|
|
|
Bake large loaf pans for 75-80 minutes, mini loaf pans for 50-55 minutes or until pick comes out clean |
