Easy Yellow Cake

Yellow Cake
2 cups (300g) Mina's Purely Divine All Purpose Baking Mix
2½ tsp. Baking Powder
¾ tsp. Salt
½ cup Shortening (we use Spectrum butter flavor)
1 cup Sugar
3 Large Egg Yolks
1 cup plus 2 Tbsp. Milk, Coconut, Almond or Soy Milk
1 tsp. Vanilla
  Preheat oven to 375°F.
  Sift Mina's Purely Divine All Purpose Baking Mix, baking powder and salt. Set aside.
  In mixer bowl, cream shortening thoroughly.
  Add sugar gradually to combine until light and fluffy.
  Add egg yolks and beat to mix thoroughly.
  Add set aside dry ingredients to the mixer bowl alternately with milk, beating after each addition until smooth.
  Stir in vanilla.
  Oil and line with parchment paper cut to fit bottoms of two 8-inch cake pans.
  Pour cake batter evenly into prepared pans & smooth top.
  Bake for 25 minutes or until pick comes out clean.
