Cranberry Sauce Cake

2 cups Mina's Purely Divine All Purpose Baking Mix |

1 teaspoon baking powder |
•
|
1 teaspoon baking soda |
•
|
½ teaspoon salt |
•
|
1 cup butter or margarine, softened |
•
|
1 cup sour cream |
•
|
1 cup sugar |
•
|
2 large eggs |
•
|
1 can (14 oz.) whole berry cranberry sauce |
•
|
1 cup chopped pecans, optional |
|

Preparation: |
|
|
|
Preheat oven to 350ºF. |
|
|
|
Cream butter and sugar. Add eggs and extract, mix well. |
|
|
|
Combine Mina's All Purpose Mix, baking soda, baking powder and salt. |
|
|
|
Add to creamed mixture alternately with sour cream. |
|
|
|
Spoon 1/3 of the batter into greased 9 X 9 square baking pan. |
|
|
|
Top with 1/3 of the cranberry sauce. Repeat layers twice. |
|
|
|
Sprinkle with pecans if using. |
|
|
|
Bake 55-60 minutes or until picks comes out clean. |
