Chocolate Chip Cookies
1½ cups (225 g) Mina's Purely Divine All Purpose Baking Mix
1 tsp (6 g) baking soda
¼ tsp (1.5 g) salt
¼ cup (56.5 g) butter or margarine (softened, not melted)
½ cup (112 g) brown sugar
½ (112 g) cup sugar
1 large egg (50 g)
½ tsp (5 g) vanilla extract
1 cup (6 oz /224 g) chocolate chips
  Vegan Version:
Substitute 3 Tbsp coconut or almond milk in place of eggs, bake as directed below.
  Preheat oven to 325ºF.
  Mix Mina's Purely Divine All Purpose Baking Mix with baking soda and salt. Set aside these dry ingredients.
  Cream butter or margarine with the brown sugar, sugar and vanilla.
  Add egg and blend well.
  Stir in the set aside dry ingredients.

Mix in the chocolate chips.

  For cookies line cookie sheet with parchment paper, lightly greased.
  Drop by teaspoonfuls on cookie sheet 2 inches apart. Cookies will spread.
  Bake 9 to 11 minutes.
  Yields: 3 dozen 2½" cookies.
  For bars press dough evenly in an oiled, 9 x 13 pan.
  Bake 20 minutes.
  Let cool 10 minutes. Cut into bars.
  Cool completely before removing from pan.
  Yields 24 bars.
