Jelly Roll

¾ cups Mina's Purely Divine All Purpose Mix
3 large eggs, separated
⅓ cup sugar
¼ tsp. vanilla
pinch salt
3 Tbsp. water
½ cup jam
  Preheat oven to 400°F
  Oil jelly roll pan and line with parchment paper
  Beat egg whites and salt until mixture forms soft peaks that curl downwards, transfer to another bowl
  In mixer bowl beat egg yolks, sugar, and vanilla until fluffy and thick
  Sift Mina's Purely Divine All Purpose Mix 2 times and fold into the egg yolk mixture
  Fold beaten egg whites until just mixed
  Fold in the water and pour into prepared pan, spreading to sides
  Bake for 10-12 minutes until sides of sponge shrink a little
  Unmold sponge onto sheet of parchment paper
  Peel away paper from sponge, trim edges of sponge with sharp knife
  Spread jam over sponge, working quickly and roll long edge away from you
  Place seam side down on wire rack to cool
