Cranberry Sauce Cake

 2 cups Mina's Purely Divine All Purpose Baking Mix
 1 teaspoon baking powder
 1 teaspoon baking soda
 ½ teaspoon salt
 1 cup butter or margarine, softened
 1 cup sour cream
 1 cup sugar
 2 large eggs
 1 can (14 oz.) whole berry cranberry sauce
 1 cup chopped pecans, optional


Preheat oven to 350ºF.

Cream butter and sugar.  Add eggs and extract, mix well.

Combine Mina's All Purpose Mix, baking soda, baking powder and salt.

Add to creamed mixture alternately with sour cream.

Spoon 1/3 of the batter into greased 9 X 9 square baking pan.

Top with 1/3 of the cranberry sauce. Repeat layers twice.

Sprinkle with pecans if using.

Bake 55-60 minutes or until picks comes out clean.
